Cooking Demonstration – Sicilian Schiacciata Bread – Originally cooked in the ashes of a hearth, schiacciata (which means “squashed”) is a one inch thick, soft bread. The classic version is brushed with olive oil and sprinkled with salt. Some add herbs or make a sweet version with grapes and sugar.
